Cold Cucumber Soup

I'm one of those types that likes to eat according to the seasons....Soups for autumn/winter and salads for spring/summer but cold soups are the exception.

My mom introduced me to this soup in my early years but not until my adult life did I appreciate the flavours of this refreshing soup. One caveat...although this soup is delicious and refreshing, skip it if your meeting clients or going on a hot date...the garlic will knock'em out!

You will need:

1 cucumber, 3 cloves of garlic, 1 tub of plain yogurt (2 cups), 1 slice of white bread, olive oil, white wine vinegar, salt, dill.

1) You will need a mortar & pestle. Throw in some grains of coarse salt and mash the garlic into a paste. Take your slice of bread, soak it in water then squeeze the liquid out with your hand and throw the lump of wet bread plus 5 Tsp. of white wine vinegar and pound until thoroughly mixed.

2) Now you will slowly....s-l-o-w-l-y add 1/4 of a cup of good olive oil into the paste and now transfer to a large bowl.

3) Rinse and dice 1 whole cucumber (seeded & skin on) and add it to the bowl along with the yogurt.

4) Using a whisk, slowly stir in from 1 to 1 1/2 litres of water and depending on how think you would like your soup, will determine the amount of water you use.

5) Taste for seasoning, adjust and mix in 3 Tbsp. of chopped fresh dill.
